A Chocolate Cake to Feed Lots of Children

Adapted from a book I love called 50 Fabulous Chocolate Cakes  edited by Rita Erlich

This easy chocolate cake feeds a lot of hungry children, quickly transforms them into happy children and it always works.

A Family Chocolate Cake

Ingredients

  • 2 cups water
  • 3 cups sugar
  • 1 tsp bicarbonate of soda
  • 250g (8 oz) butter
  • 8 tbsp cocoa
  • 4 eggs
  • 3 cups self raising flour

Method

Grease and line (I don't bother lining it but you are supposed to) a very large cake tin (I suggest a baking dish size).

Preheat oven to 180 degrees Celsius (350 degrees Fahrenheit)

Place first 5 ingredients in a large saucepan (tall sides are good because the mixture boils up very high). Stir and bring to boil. Simmer for 5 to 8 minutes. Do not, I repeat, do not leave the stove - this mixture can boil over in an instant. Cool mixture for at least 30 minutes but it is better if the mixture becomes cooler or gets to close to room temperature.

Pour boiled mixture into large mixing bowl. Add eggs (they are supposed to be lightly beaten but I don't think it makes any difference) and sift the self raising flour into the mixture.

Mix well with electric beater and pour into cake tin. Bake for 50 to 60 minutes.

Ice with your favourite chocolate icing.

Feeds millions.
